Thomas Tixier

Thomas Tixier is a recently established winemaker based in Courgis, Burgundy, where he is fully dedicated to producing natural wines. He previously worked alongside his mother on the family estate, cultivating 8 hectares of vines in the Chablis region using conventional methods. However, through meeting other natural winegrowers and tasting their wines, he was inspired to take a new direction. Today, Thomas farms 4 hectares of vines organically, a conversion he began three years ago, with official certification expected starting from the 2024 vintage. His plots, located near Courgis, lie just opposite those of Alice and Olivier De Moor, well-known advocates of natural winemaking. In the cellar, Thomas has completely overhauled his approach to craft the most natural Chablis possible. He no longer uses oenological additives, nor does he fine or filter his wines during vinification. The wines are aged for 12 months in both tanks and barrels, with bottling taking place just before the next harvest. His cuvée "Auxillium" — named in tribute to his son Axel — faithfully reflects the region’s terroir and showcases Thomas's determination to make a name for himself in Chablis. With the 2023 vintage, it's safe to say he's off to a brilliant start. Santé!
