Nestled in the heart of Chablis, Domaine de l’Enclos is a beautiful story of family and passion. Founded in 2016 by Damien and Romain Bouchard, it is built on 29 hectares of vineyards, lovingly cultivated for generations. Sons of Pascal Bouchard, the two brothers took over with a shared ambition: to showcase their terroirs through organic farming, a certification they obtained in 2018. Their vineyards stretch across the Chablis region, from Petit Chablis to the prestigious Grands Crus (Clos, Blanchot, Vaudésir), as well as renowned Premiers Crus like Fourchaume, Mont de Milieu, and Vau de Vey. Each cuvée expresses the richness of these terroirs with generosity and depth, offering a distinctive take on Chablis.The estate flourishes in a historic setting—the former Cistercian abbey of Pontigny—where semi-underground cellars house hand-harvested grapes from the most exceptional plots. Winemaking follows a natural approach, using only indigenous yeasts and minimal sulfur. Fermentations occur spontaneously, and a careful mix of barrel and tank aging refines each wine with precision.Throughout the seasons, an 18-person team tends to the vines with dedication, joined by 40 harvesters when the grapes reach perfect ripeness. To protect against unpredictable weather, pruning is delayed until April to mitigate spring frosts, and certain plots benefit from overhead sprinklers. Among the estate’s signature wines, Chablis "À l’Ouest," from a sun-drenched hillside in Beine, stands out for its finesse and energy. Cuvée Gabrielle, named after the brothers’ grandmother, comes from old vines planted in La Chapelle-Vaupelteigne and offers a deep, nuanced expression of Chardonnay. Driven by their passion for wine and love of their land, Damien and Romain Bouchard craft authentic, characterful Chablis.
