Sylvain Respaut first settled in the Agly Valley as a beekeeper in 2007. However, meeting a group of neo-winemakers, eager to create different, vibrant wines, was a pivotal moment: “This is exactly what I want to do!” he was heard saying. He took over a few hectares of old hillside vines, converting them to organic farming. After several years of learning, sharing advice and equipment, and benefiting from mutual support, he decided to partner one fine morning with Olivier Cros, a winemaker's son dreaming of a new way to grow grapes and make wine. Together, these two friends, both beekeepers and winemakers, reinvent their profession, which one of their children affectionately dubbed "apiqueron." Thus, the Cave Apicole was born, where they produce natural, fruity, and light wines, as well as natural mead and wildflower honey.It is in the former cooperative cellar of the village of Montner (Pyrénées-Orientales - 66), nestled in the beautiful terroir of Fenouillèdes, that these two passionate individuals have chosen to establish their winery.
