Florent and Julien Mignon, heirs to a long-standing Champagne winemaking tradition, revived wine production in 2015 after several decades dedicated to selling grapes to the cooperative winery. This renewal was made possible thanks to family support, particularly from their father, and the construction of a new cellar, completed just before the 2016 harvest. The Mignon brothers manage a diverse vineyard, with 90% Chardonnay located in the communes of Avize, Cramant, and Cuis, and 10% Pinot Noir in Cumières. Their plots come from a remarkable family legacy, with high-quality terroirs in Grand Cru and Premier Cru areas.They focus on organic viticulture and natural winemaking. Julien is in charge of soil management, while Florent oversees the vinifications, adopting a minimalist approach to prioritize the expression of the terroirs they work with. The wines are aged in oak barrels, with spontaneous fermentation, followed by a minimum of two years of aging in the bottle. Each cuvée is crafted from a specific terroir, except for "L'Aventure," a blend of Chardonnay from Cuis, Avize, and Cramant. The Mignon brothers have also made several investments to modernize their estate. They installed photovoltaic panels to achieve energy self-sufficiency (excluding viticulture), renovated the press room floor for improved safety, and expanded their barrel collection with barrels of 228, 350, 500, and 600 liters. The aim is to extend the aging process for their terroir-driven cuvées.
