The Domaine Hervé Souhaut, established since 1995 in the northern Ardèche region, embodies demanding and natural winemaking. Hervé Souhaut cultivates his vines using organic agriculture (certified since 2008) and biodynamics, favoring manual labor and minimal intervention in the cellar to reveal the purity of the terroir. The vineyards, located between 200 and 400 meters in altitude, thrive on soils of schist, granite, and clay. Under a Mediterranean climate softened by continental influences, the flagship grape varieties—Syrah, Gamay, Roussanne, and Viognier—express a distinctive minerality and vibrant freshness. In the cellar, fermentations are spontaneous (using indigenous yeasts), aging is done in oak barrels or concrete vats, and sulfites are kept to an absolute minimum (less than 30 mg/L for reds). The wines, unfined and unfiltered, thus retain their full authenticity
