Nestled in the hills of Monein within the Jurançon appellation, Domaine de l’Apollin is a boutique winery led by Florent Foury, who tends to a small but strategically located vineyard planted on clay-limestone soils enriched with molasse and puddingstone. Some of the vines, including parcels over 80 years old, thrive in a unique microclimate shaped by both oceanic and mountainous influences—ideal conditions for cultivating the region’s signature grape varieties: Gros Manseng and Petit Manseng. Harvesting is done entirely by hand, with yields deliberately kept low to ensure optimal grape concentration. Fermentation relies on native yeasts, without additives, and the wines are aged for 10 months in 228-liter and 350-liter oak barrels, resting on fine lees without stirring. This meticulous process preserves the wines’ freshness, minerality, and structural balance, resulting in cuvées like Le Champ des Loups—known for their precision, tension, and ability to express the terroir’s distinct character. Drawing on his experience working alongside renowned winemakers, Florent Foury adopts a minimal-intervention approach in both the vineyard and cellar, crafting wines that are authentic and true to their origins. Though relatively young, Domaine de l’Apollin has quickly gained recognition among lovers of dry and sweet whites for its commitment to quality.
