Founded by Or Zagury in Haute-Loire, Brasserie Mosaïque is a nano-brewery driven by a free, natural vision of beer. Inspired by the world of living fermentations and natural winemaking, Or Zagury crafts beers without standardisation, letting the living process guide every step. Brewed in very small batches, the beers rely on low-intervention, often long fermentations, followed by ageing in barrels, amphorae or demijohns. Mosaïque beers are unfiltered, unpasteurised and generally low in alcohol. They display complex aromatic profiles, combining fruity, herbal, acidic or woody notes. Ingredients come from organic farming or local foraging, and the beers are fermented primarily with indigenous yeasts captured from the surrounding environment. Each cuvée is conceived as a unique creation, deeply shaped by season, place and time.
