Cyril Villemonte describes himself as a sommelier who, from time to time, doesn’t drink wine. Since discovering oenology, he has developed a deep appreciation for fermented drinks — both alcoholic and non-alcoholic. From this passion, 11h11 was born: a project rooted in the desire to create alcohol-free drinks that resonate on the same frequency as natural wine. His creations are crafted through guided or spontaneous fermentation, using ingredients sourced from organic farming or wild foraging (origins available upon request). No additives, no pasteurization — to preserve the energy, nutrients, and vitality of each flower, root, herb, or fruit. Fermentation starts naturally thanks to wild yeasts and bacteria present on the raw ingredients, or with the help of a homemade starter — often made from ginger, turmeric, carrot, or other roots, depending on the season and inspiration. A small amount of cane sugar may be added to nourish the good bacteria. It is fully consumed during fermentation, resulting in an alcohol content below 1.2% (most cuvées are around 0.5%). Some are made using only the fruit’s natural sugars. Each cuvée is unique — an unfiltered expression of a moment or a season. Some are built ingredient by ingredient, inspired by foraging and intuition; others are created in a single, spontaneous gesture. Although these drinks are handcrafted and contain less than 1.2% alcohol, they are unpasteurized and made with natural ingredients that can have subtle effects on the body. They are therefore not recommended for pregnant women.
