Mathilde Savoye, a young oenologist and daughter of winegrowers, founded her estate in 2017 in La Neuville-aux-Larris, in the heart of the Vallée de la Marne. She specializes mainly in the cultivation of Meunier, the region's emblematic grape variety. The estate covers 3.40 hectares, exclusively planted with Pinot Meunier. Mathilde practices sustainable, environmentally friendly viticulture, certified High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC). The rows are permanently grassed, the soil is lightly tilled beneath the vines with a plow, and sheep graze among the vines to promote biodiversity. In the cellar, fermentations occur naturally with ambient yeasts. Malolactic conversion is blocked to preserve the wines’ natural freshness. The champagnes are then aged sur lattes, with minimal sulfur additions just before bottling.
