The Domaine de la Cras, located on the plateau above Dijon, has been run since 2014 by Marc Soyard, formerly of Domaine Bizot, who brings an artisanal and highly precise approach. The vineyards — Chardonnay and Pinot Noir planted on well-drained limestone soils — are farmed organically and biodynamically, with light tilling, controlled cover crops, and intentionally low yields to preserve the natural tension of the site.In the cellar, Marc favours low-intervention winemaking: partial whole-cluster fermentations for the reds, indigenous yeasts, gentle extraction, and long ageing mostly in old barrels and foudres (up to 24 months depending on the cuvée). Sulphur is used sparingly, only to secure the bottling.The resulting style is precise, vibrant and energetic: whites that are taut, saline and citrus-driven, sometimes showing a light reductive note on opening, and reds that are chiselled, spicy and beautifully textured. Limited in quantity and highly sought after, these wines offer one of the most distinctive contemporary expressions of the Dijon vineyard.
