Marie & Foulques took over the "Les Cordères" parcel in Bouzeron which is home to a forty-year-old Aligoté vineyard, planted in 1980 at high density, perched at 380 meters, the highest point of the appellation. The vines sink their roots deep into soils composed predominantly of white marl. The 2023 vintage began with light rains in May, followed by a drier, warmer spell in June. In mid-July, a violent hailstorm struck the vineyard, causing near-total destruction of the south-facing sides of the grape clusters and halting ripening until harvest. A testing first vintage, which only strengthened his energy and determination to craft a wine of true quality.At harvest, a meticulous sorting of dried berries was carried out. The grapes were then gently pressed over the course of four hours. A precise settling followed, before fermentation began in barrels, with indigenous yeasts and no added sulfur during vinification. The wine continued its élevage for twelve months in barrels (228L and 400L), before being racked and allowed to complete its aging with a further five months in stainless steel tanks, without fining or filtration, before bottling.
