One day, three Chenin Blanc enthusiasts stepped into a secluded plot enclosed by ancient stone walls. This hidden gem, long forgotten, shelters century-old vines, some nearing 120 years of age. Nestled on the western edge of Montlouis-sur-Loire, facing south and overlooking the right bank of the Cher, the vineyard is rooted in a yellow tuffeau bedrock covered with clayey sands. To unlock its full potential, meticulous care was given: soil regeneration, microbial life revival, and biodiversity restoration. Thanks to its unique microclimate, the Clos de la Frelonnerie was spared from the devastating frost of April 2021. Committed to organic and biodynamic farming, currently undergoing certification, the estate favors manual harvesting. After direct pressing, fermentation occurs with indigenous yeasts in 620-liter demi-muids. A 24-month aging period on fine lees, without racking, in the same barrels, enhances the wine’s purity and remarkable minerality. Montlouis-sur-Loire Monopole Blanc 2021 captivates with its finesse and balance. Its sharp structure, delicate oak integration, and lingering freshness make it an ideal pairing for refined fish dishes such as turbot or John Dory with beurre blanc, as well as a trout gravlax.
